Recipe: Veggie & Turkey Burger Stew


I love stew! I absolutely LOVE a wholesome, warm chunky bowl of delicious flavors. This past Friday we were watching “The Assassination of Jesse James” movie starring Brad Pitt. We were watching the scene where they were in the woods making stew and at that moment I got a massive craving for stew. So after the movie was over, my husband, kids and I went to the grocery store and got a bunch of ingredients and went home and made our stew.

We did not follow any recipes. This was an experimental stew and it came out amazing! I am glad I actually wrote down what we did, unlike many other times in our lives where we make something amazing, but are never able to make it again cause we don’t actually know what we did, lol.

  • 1/2 Head of Green Cabbage
  • 2 cups of chopped Celery
  • 3 cups of shredded Carrots
  • 2 cups of chopped Asparagus
  • 3 cups of Califlower Rice
  • 3 cups of Zucchini Strings
  • 2 pounds of turkey burger
  • 5 diced garlic cloves
  • 1 can of Campbell’s Tomato & Carrot Bisque
  • 2 cans of diced tomatoes
  • 1 can of vegetable broth
  • 1 can of beef broth
  • 1 cup water
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of basil
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • Grated Parmesan Cheese
  • French’s Onion Crisps Topping
  • Shredded Cheddar Cheese or Mozzarella Cheese


  1. In a large skillet, brown the turkey burger. 
  2. Drain the grease.
  3. In a large stew pot, bring the vegetable broth and beef broth to a boil.
  4. Next, add ALL of the ingredients listed EXCEPT the Parmesan cheese, shredded cheese and the onion crisps to the pot.
  5. Mix it all together well.
  6. Turn the heat to a simmer, cover the pot and let it cook.
  7. As the mixture cooks, the veggies are going to release more water and will shrink up a bit.
  8. Every so often, when the top starts to bubble, mix the stew.
  9. Keep cooking the stew until the veggies are all soft and fully cooked.
  10. Once fully cooked, put some in a bowl and top with some Parmesan Cheese, Shredded Cheddar or Mozzarella Cheese, and some Crispy Onion Strings.
  11. Mix all together and enjoy!


Please note: The perfect flavor is in the eye of the beholder.  I recommend that every so often as the stew is cooking to do a “Taste Test”.  If you feel it needs a little more spice, add it.  The recipe above is a what I did, but don’t be afraid to make it your own!
